Healthy Pumpkin Blondies (Vegan, Gluten-Free, Refined Sugar Free)

First blondies recipe on The Dimpled Date and ofc they had to be seasonal! And these are crazy delicious. Made with brown vegan butter, pumpkin spice, and maple sugar, these blondies (or should I say orangies/ochre-ies?) give the vibes of a cookie bar with a crunchy exterior and a moist & chewy inside. They have plenty of sweetness, spice, pumpkin, and fall flavor. And the color is a-gorgeous! A pretty pumpkin-y orange in the right lighting. Better yet? They are so, so simple and quick to make and no specialty equipment is required to make them. Even better? These Healthy Pumpkin Blondies are vegan, gluten-free, and refined sugar free. AND they are 100% nut-free and coconut-free! Stay tuned for a date-sweetened version with white pumpkin chips coming soon! So Happy Autumn because its officially fall yall!

Blondies are here! They were one of my favorite childhood desserts and here they get a healthier fall-vibes makeover.


These ones are entirely vegan, gluten-free, refined sugar free, and nut-free. As you can see, in natural light they’re more of a light orange-golden-brown, but in artificial light, they take on a more vibrant orange hue.


Let’s talk about their flavor: incredible. Think a pumpkin-forward, brown-butter-infused (vegan ofc), warmly spiced, sweet, maple-y cookie bar with a crispy exterior and soft chewy inside. These are insanely good. And not only is the taste + texture fabulous, but they will make your kitchen smell like a heavenly autumn daydream.

Feeling lazy with the cloudier + colder weather? Well, I have good news for you: the prep for these blondies is as easy as mixing all the ingredients together in a bowl, spreading into a baking dish, and off to the oven they go! It literally takes less than 15 minutes of prep and the bake time is about 35 to 45 minutes.


They are so, so simple and so worth it. If you’re feeling extra, you can brown the vegan butter, otherwise simply melting it works too! (Like I said easy, peasy... pumpkin... squeezy? All bad puns aside, you get the point).
