Fruit-Sweetened Blueberry Muffins (Vegan, GF, Fruit-Sweetened, Low-Fat, Nut-Free Option)

A fluffy, moist, wholesome blueberry muffin recipes made without eggs, dairy, oil, and gluten? And sweetened only with fruit? That can be made nut-free?? Sign us up! The next Dimpled Date muffin has arrived: blueberry muffins that are sweet, soft, fluffy, and packed with blueberry flavor. They are nutritious AND delicious and are so simple to make. Made with nutrient-dense ingredients like nut/seed butter, dairy-free yogurt, fresh fruit, applesauce, and buckwheat flour, these muffins are as nourishing as they are yummy. There is an option to color these muffins with blue spirulina to get that characteristic blue-purple blueberry hue, or you can leave them natural. These muffins make for the perfect breakfast or snack, and are awesome with a little vegan butter + fruit-sweetened blueberry preserves (like Rigoni di Asiago's Fior di Frutta preserves in blueberry flavor!).



I've been loving the breakfast recipes lately, and I've been meaning to make this blueberry muffins recipe for a while now. And now it's here! It's honestly so wholesome and yummy, trust me when I say it's my one of my favorite Dimpled Date muffins. Kind of reminds me of a healthier copycat of Little Bites's blueberry muffins.
These Healthy Blueberry Muffins are entirely vegan, gluten-free, fruit-sweetened, and low-fat with a nut-free option. And they're highly customizable (you can change the color, use various forms of blueberries, and change the size, if you'd like!).

These muffins are fluffy, sweet, moist and packed with blueberry flavor yet they are still healthy and clean. Also, they're one-bowl and so simple to make (essentially, you just mix the ingredients together in a bowl, fold in the blueberries, bake, and you're done).

These muffins can be served on their own or are also great with nut/seed butter, vegan butter + fruit-sweetened blueberry jam, or I bet a simple blueberry lemon glaze could be really nice on them too.
Customization for these Fruit-Sweetened Blueberry Muffins
Make them mini: Pour the batter into a greased mini muffin tin and bake for 6-10 minutes at 350 F.
Types of blueberries used + what's the difference??: for these blueberry muffins, you may use fresh blueberries, frozen (no need to defrost), dried, or freeze-dried. Fresh blueberries and frozen are self-explanatory, but dried blueberries are essentially craisins/raisins but made with blueberries. Freeze-dried blueberries look like little round blueberries but are completely dry and crispy/brittle (+ will break into a powder when you crush them between your fingers). Any of these forms of blueberries are perfect for use in these muffins, just make sure if you use dried or freeze-dried, that they're unsweetened.
Make them jammy: Also, you could add a few swirls of fruit-sweetened blueberry jam to the muffins before baking while the batter is in the tins to enhance the flavor. Just add a few gobs of blueberry preserves as you scoop the batter into the tin, and swirl with a toothpick/chopstick/knife. And/or, you can serve the baked muffins with blueberry jam.
Change the color: You can make these muffins a natural blueberry hue if you'd like, or just leave them a natural color. To make them bluish-purple: add blue spirulina to the batter and stir to fully combine.
Make them low-fat: opt for dairy-free Greek yogurt, like unsweetened almond milk Greek yogurt + try a low-fat plant milk like unsweetened soy milk or rice milk.
Make them nut-free: replace the cashew butter with sunflower seed butter or another seed butter and choose an unsweetened nut-free plant milk like oat milk, hemp milk, rice milk, pumpkin seed milk, etc. As for nut-free dairy-free yogurt, choose unsweetened oat milk yogurt, or a seed-based yogurt.
Make a lemon-blueberry glaze for these muffins: mix together lemon juice, unsweetened plant milk, blueberry extract (or jam), and powdered maple sugar and drizzle on top of these muffins. Note that this glaze is not fruit-sweetened.
